Morning Dunkin” Toast

There is nothing easier than this delicious dunkin” toast to use in Milk, Coffee, Tea. I make a spice seasoning of one tablespoon cinnamon, one teaspoon granulated sugar, one teaspoon nutmeg, 1/2 teaspoon clove, mix well. I also love thick sourdough bread (use your favorite bread), butter one side and add spice mix, place under broiler just a few minutes (watch it!).

Dunk away!

Chicken Fajitas

These are such a fun and easy meal to put together. I use 2 whole Chicken breasts either baked or grilled, cooled then shredded. 1/2 red bell pepper, 1/2 green pepper, one white onion sliced, one minced clove of garlic, dash of chili powder, dash of salt and black pepper.

Saute the peppers and onions with minced garlic, chili powder, S & P, until softened. Add shredded chicken and stir gently cook 6 minutes. You can warm the flour tortillas in the microwave, if desired.

Fill the flour tortillas full and roll closed. A side of rice and beans goes well with these fajitas.

Stove-Top Mac ‘n Cheese

Using three cheeses (your choice), 1 cup milk, 1/2 cream, black pepper, large elbow noodles. This Mac ‘n Cheese is so creamy and such a complete comfort food. My gang makes a meal of it with a side salad.

Boil elbow noodles (as per box instructions) drain, add butter and salt and toss, in a saucepan on low heat add milk, cream and slowly add you favorite cheeses until creamy and melted. Add cooked large elbow noodles, toss and serve, garnish with fresh cracked black pepper.

Oh my so yummy!

Ham & Pineapple Cheese Pizza

Pizza is always a great comfort food. We love the varieties to make at home. Using refrigerated pizza dough, I had Ham leftover from our Christmas Dinner, I used provolone and mozzarella cheeses, pineapple small tidbit chunks, baked for 14 minutes and it was so good.

I made a green mixed garden salad on the side.

Perfect for lunch or a light supper.

Baked Mac and Beef with Cheese

This casserole is just simply comfort food for my family. They love it! 16 ounces Sirloin Ground Beef, 1 small onion diced finely, 1/2 bell pepper diced finely, s & p to taste, one 2.5 ounce can tomato paste, one 10 ounce can diced tomatoes, 1 cup tomato sauce, one cup finely grated fresh parmesan cheese. one and one half cups large elbow noodles Garnish with parsley.

In a skillet brown meat with onions and peppers (drain off any excess grease), add remaining ingredients on low heat, stir, transfer to a baking casserole dish. Sprinkle well with fresh cheese, cover with foil and bake @ 400 F for 15 minutes.

Add additional fresh cheese on top after baking, serve and enjoy!

I like to have a romaine lettuce green salad and cheese sticks with this dish. Choose whatever side dishes you like.

A comfort food for any main entrée! 5 pounds Yukon Gold Potatoes, peeled and cut, boil in salted water until tender, drain and add into a large mixing bowl, add 3 strips crispy bacon cut into pieces, 1/4 cup Milk, 1/4 stick butter, s & p to taste, 1/2 cup grated cheese (your favorite), handful of parsley chopped, one teaspoon garlic powder and one teaspoon onion powder. Mix on low until all ingredients are combined. Transfer to a baking dish and bake @ 375 for 10 minutes.

Serve and enjoy!

Apple Cream French Toast

My family loves thick sliced French Toast with fruit. This is a true comfort food for breakfast or brunch. I use Texas Toast (bread-thick slice), soak in almond extract (can use Vanilla Extract) and 3 eggs (Beaten), coat bread slices well. Using a buttered griddle pan, cook each coated bread slice 3-4 minutes each side (or until golden brown). In a small saute pan add 2 sliced apples, honey, and cook until tender (I tend to dice the apples). Add cool whip (Frozen) in a bowl add warmed diced apples and stir well.

Plate French toast and then add apples n’ cream! Dust with confectioners sugar and cinnamon and enjoy!

Baked Corn Fritters

We love any kind of Fritters! Sweet and savory. They are such a comfort food! During the corn season I always buy many dozens, cut the kernels and corn milk from the cobs and freeze them for a later use. We have fresh corn year round. Although, you can make this recipe with canned or frozen corn as well.

In a mixing bowl add 2 cups fresh corn, 2 beaten eggs, 1 cup (finely) bread crumbs, s & p to taste, one teaspoon garlic powder, one teaspoon onion powder, 1/2 teaspoon parsley flakes. Combine all ingredients together, form patties, place on rimmed baking sheet pans, drizzle with canola oil. Bake @ 400 F for 15 minutes.

Serve with sour cream and chives! Yum!

Sweet Sausage and Potato Casserole

This is such a warm comfort food in the chilly months. One pound crumbled cooked sweet Italian Sausage, 3 potatoes peeled, cubed, one cup parmesan cheese grated, bunch of flat leaf parsley chopped, one teaspoon onion salt, garlic powder, 1/4 cup vegetable stock. Place all ingredients into a oval baking dish, stir to combine, cover with foil bake @ 350 for 30 minutes.

So delicious and easy.

Sweet Potato Salad

This recipe is not just for the Holidays-make it anytime. If you love sweet potatoes then this delicious recipe will certainly be a fun one to make. 4 sweet potatoes, peeled and cubed, boil in hot water add a pinch or two of cinnamon and cook until tender (about 20 minutes). Allow sweet potato cubes to completely cool down. Add 1/2 cup mascarpone cheese, pinch of nutmeg, 1/4 green bell pepper diced, 1/4 onion diced finely, a bit of black pepper, to taste. Refrigerate after gently stirring until ready to serve.

We love this with baked ham sliders its a true comfort food to us especially on a weekend.

Creamy Mushroom Soup

Soups and stews are the ultimate comfort food. We eat soups/stews year round. This creamy mushroom soup has two favorite mushrooms, baby bellas and white button. Using 6 ounces of each, slice them. In a soup pot add 1 cup light cream, one teaspoon corn starch, stir well on medium heat, add one cup vegetable stock (low sodium), 2 tablespoons butter to saute mushrooms until tender, add them into soup pot, a pinch or two of garlic salt, onion powder, garnish with parsley.

That simple and super flavorful.

The All~American Italian Spaghetti & Meatball Supper

A true comfort food in our home. I love to make homemade meatballs baked in the oven in an iron skillet. I use my homemade spaghetti sauce from my garden tomatoes. Regular Spaghetti boiled in salted water. For the meatballs I use sirloin ground beef (one pound-16 ounces) 1 cup seasoned Italian bread crumbs, 2 beaten eggs, oregano, garlic (minced), parsley, grated parmesan cheese. Mix well and using clean hands round out bite sized meatballs and place into a 10 inch iron skillet, pre heat oven to 400 F and place rolled meatballs in the oven and bake 20 minutes (I cover with aluminum foil).

I boil the pasta in salted water, rinse and set aside. In a lidded soup pot I add my homemade sauce on low heat to simmer, once the meatballs are done I add them into the pot and increase heat to medium/low and cook 15 minutes. Add cooked spaghetti, using tongs, stir and combine. Plate and serve. Optional: Grate parmesan cheese, to garnish.

I always have a mixed green salad and garlic bread to round out the meal.

Broccoli & Carrot Creamy Soup

We love soup year round and this one is a new recipe we love. Easy and Quick! One medium head of fresh broccoli (crowns, save stems and freeze them), 2 carrots peeled, diced small, one stalk celery diced finely, one small onion diced or grated finely, 2 cups Low sodium vegetable broth, 1/2 cup heavy cream, cook soup in a lidded pot for 20 minutes on low heat, stir during cooking time.

Serve with croutons, biscuits, crackers or toasted bread!

Baked Eggs-Cream Cheese-Herbs-Casserole

This dish is so lovely for a Sunday Brunch! 6 large eggs, 16 ounces cream cheese (softened), fresh thyme, rosemary, parsley. In a food processor add cream cheese and eggs (one at a time) on low speed, once combined run on high 2 minutes, add fresh herbs. Transfer to a non stick baking dish and place into a 400 F oven for 20 minutes. (Salt and black pepper to taste).

Serve with homemade biscuits and honey.

It is truly an easy comfort food we love.
